Ingredients

  • 1 small paring knife
  • 1 9-inch chef's knife
  • 1 whole sweet ripe pineapple

Instructions

  • Create a Flat Base: Lay the pineapple on its side. Using your chef’s knife, cut off the crown (the spiky top) about 1 inch down. Then, cut about 1 inch off the base. This gives you a flat, stable surface so the pineapple can stand upright without wobbling.
  • Peel the Skin (Leave the Eyes!): Stand the pineapple up on its new flat base. Hold the top securely with one hand, and use your chef’s knife to slice the tough outer peel off in vertical strips. Follow the natural curve of the fruit! Cut as close to the edge as you can. You want the brown pineapple "eyes" to remain exposed in the flesh—do not cut so deep that you remove them!
  • Cut the Diagonal Ridges: Lay the peeled pineapple back on its side. If you look closely, you will notice that the brown "eyes" line up in perfect diagonal rows.
    i. Take your small paring knife and make a shallow, angled cut along the right side of a diagonal row of eyes.
ii. Make a second angled cut along the left side of that same row, creating a "V" shape.
iii. Lift out the V-shaped wedge (taking the tough eyes with it) and discard.
iv. Repeat this process, following the diagonal lines all the way around the fruit.
  • Slice and Serve: Once all the eyes are removed, you are left with a stunning, spiraled pineapple! You can slice it into beautiful round discs, or cut it in half lengthwise, remove the tough inner core, and chop it into bite-sized cubes.

Notes

  • How to Pick a Ripe Pineapple: A green pineapple is not ripe yet! Look for a pineapple that is mostly golden-yellow from the base upwards. Give the base a quick sniff—it should smell deeply sweet and tropical. If it smells fermented, it is overripe!
  • Save the Core: When you cut out the tough, fibrous inner core, don't throw it away! While it's too tough to eat raw, it is packed with flavour. Throw the core pieces into a pitcher of ice water for a refreshing infused drink.
